Gooseberry Jam

Yesterday I picked the last of our gooseberries.  I love gooseberry jam for a number of reasons....the main one being I'm the only one who will eat it so I can guarantee that there will be jam available for ME when I want it!


Not many, hoping I will have enough to make a pot of jam.


'Top & Tail' the gooseberries.


Weigh them.


Put in a saucepan with a little water - just enough so that they are not quite covered.  Simmer for 10 - 15 minutes until the gooseberries are soft, but still hold their shape.


Add an equal amount of sugar and stir until dissolved


Once the sugar has dissolved bring to a boil and rapid boil for 10 minutes.  


Test for setting point.

Pour into a sterilized jar and seal.


One pot of gooseberry jam!

Now just need to make the scones!
